Our Story
It all started early in 1978; Peter and Maria Dimitriou were scouting for a location to open a homey, family-style restaurant. Later that June, they purchased a quaint, existing restaurant and established Country Kitchen Restaurant at 448 Central Avenue in downtown Highland Park. The 1500 square foot diner was small, but the dreams that soon filled within it were big. Business quickly took off, and in September of 1983, they purchased the rented building they became to love, along with the stone gravel parking lot just east of that. They soon built a building matching the existing 1914 one that they were already in. On the first floor, they relaunched Country Kitchen Restaurant and really made it their own style of a family-friendly and cozy, neighborhood restaurant. The motif of Grandma’s homey kitchen with busy patterned wallpaper and dark oak booths that customers could slide into and cozy up in conversation continuously drew the town’s people in for a delicious bite to eat or a place to feel at home. With the rise of business, they went from 15 tables to 50 in the blink of an eye.
Not losing a minute, they closed for business at 448 Central Avenue on May 31, 1986 and re-opened the very next morning on June 1 at 446 Central Avenue for in their new and improved locale. With the help and devotion of staff, family, and friends, they were off! Many of the Country Kitchen’s customers are Highland Park locals. Customers that would frequent the “small restaurant” and wait in a line to eat are lovingly referred to by Peter as “corner stone customers.” He always remembers their faces and greets them with this warm welcome whenever he sees them because they helped his dream become a reality. Country Kitchen is great for meetings, daily outings with the children, and serves as a great hangout spot for holidays with family and friends.
Through the years, Country Kitchen prides itself in buying the best quality produce, meats, and dairy. All of our menu items are made to order and prepared with the freshest ingredients, including freshly grated hash browns, hand-cracked egg whites for omelets, fresh fruits that are cut to order, and freshly squeezed orange juice. We also import extra virgin olive oil from Maria’s olive grove located in her hometown in the Peloponnese region of Greece.
